Lilly as far as headaches go its the sulphur in wine to preserve the wine, white wines have less sulphur, which is a chalcogen. This causes stuffiness. Years ago I would recommend taking one Tylenol, but I shouldn’t push drugs,lol.

Gus, it like saying, boxers or briefs, it Depends! I grilled some New York Strips so I choose a Cabernet. Do I plan the meal around the wine or the other way around? Both, if I come across an old Brunello a big Chianti, but not as big as a Cab, I would cook pasta with bolognese sauce. If I am grilling salmon a Pinot Noir. You match the protein and how you cook it with the wine.
